Creamed Shrimp on Toast

Ingredients:
2 tbsp flour
2 tbsp butter
1 cup milk
1 tsp oyster sauce
Dash of white pepper
Dash of salt
1 cup drained, canned shrimp or
fresh, cooked shrimp

Method:
1. Blend flour and butter over low heat.
2. Add milk, stirring constantly, until thickened.
3. Add oyster sauce, white pepper and salt.
4. Add shrimp and heat just until shrimp are heated.
5. Serve over toast.

Eggs A La Suisse

Ingredients:
2 tbsp butter, cut into bits
Thin Slices of Swiss Cheese
Grated Swiss Cheese
6 eggs
½ cup cream
Salt & Pepper

Method:

1. Cover the bottom of a baking dish with butter. On top of this, place the slices of Swiss cheese.
2. Break over the eggs. Dust with salt and pepper.
3. Pour over a half cup of cream.
4. Then cover the top with grated Swiss cheese and bake in the oven until the cheese is melted and the eggs "set."
5. Send this to the table with a plate of dry toast.
